I’m thinking to make it again, except this time I need to modify it slightly to make it keto because the person I’m making it for can’t have any flour / sugar. So my question is, can I just leave out the normal flour since it’s such a small amount and just add more almond flour? The only other option would be to add some coconut flour instead but I’m not sure that would work well. Do you have any suggestions?

I’ve made this cake 4 times now. Each cake having it’s own design dependant on what’s it’s for. It’s been a birthday graduation and christening cake. I’ve baked it in many quantities with great success. Raspberry jam made with chia seeds makes a great addition to the filling too. Deliciousness. Thank you Claudia for this great cake! ❣️

Hi Becca! There isn’t a raspberry filling – it’s just the raspberries that are dotted into the top of each cake layer that make it look like there is. Hope that helps!
